Biryani Rice ( Lamb | Chicken )

There are many countries that use basmati rice as a staple food for them. especially in the southern asia. using basic materials basmati rice, cooked with natural spices together with accompanying dishes such as lamb or chicken.


Ingredient :

  • Basmati rice – 5 kg
  • Chops onions – 300 gr
  • Fresh Chops Tomato – 500 gr
  • Water ( bouillion ) – 10 l
  • Anis star – 20 gr
  • Clove – 20 gr
  • Cardamom – 20 gr
  • Cinnamon stick – 1 stalk
  • Cumin powder – 50 gr
  • Coriander powder  – 50 gr
  • Food color ( yellow and red ) – 2 pinch
  • Oil – 200 ml

Procedure :

  • Soute onions for a while with oil in a stock pot
  • add cardamom, anis star, clove and cinnamon stick
  • stir until fragant and flavour
  • pour tomato then stir occasionaly
  • add water ( bouillion ) then boill
  • pour basmati rice ( washed and cleaned )
  • bring to simmer and stir gently to let the water is reduce
  • Pour food color on the surface of rice ( mixed w/ water )
  • Cover the stock pot with alumunium foil
  • Let them cooked with a medium heat about 15 – 30 minutes

You can put a chicken or lamb on the cooking time. depending on what you want to cook.
